My friend Claudia taught me how to make this super yummy flan. It is my favorite flan and super easy to make!
1 can of eagle brand sweetened condensed milk
1 can evaporated milk
¾ cup sugar
4 eggs
Put sugar in 9 inch round cake pan and set over high heat. Stir sugar and allow to caramelize. Cook until becomes bubbly. It will smoke a little bit. Let it cook until it almost smells burnt. This gives it a wonderful taste! Remove from heat and tip in all directions in order to coat bottom and sides of pan with sugar. Set aside.

Blend condensed milk, evaporated milk and eggs in blender. Pour over caramelized sugar. Place cake pan into water bath (use another larger round cake pan and fill approx. 1/4 with water) and cook at 400 F for 1 hour.
Let cool and remove from pan. Serve completely cold with drizzling of caramelized sugar.
8 Roma tomatoes
1 green pepper
1 bunch green onions
1-2 serrano or jalapeno chilies
1/4 cup cilantro
2 garlic cloves
dash of salt
juice of two limes
Dice tomatoes, green pepper, green onion, and cilantro. Finely dice chilies (remove seeds or keep in for more heat). Mince garlic. Combine all ingredients. Serve with tortilla chips or any Mexican dish.

Guacamole
2 avacados
2 strips of cooked bacon, crumbled
1/2 roma tomatoes, chopped finely
1 serrano chili, de-seeded and finely chopped
dash salt
Juice of one lime
2 tbs cilantro, chopped
Mash avocadoes and keep one pit in mixture. Add remaining ingredients.
